The olive tree (or Olivo) is thought to be the first tree cultivated by man, a story that began more than 6,000 years ago in what is now Turkey. The Greeks and Etruscans traded its oil, ensuring its diffusion throughout the Mediterranean, as did the Roman Empire, only to suffer a setback until the beginning of the Risorgimento, when olive oil became a symbol of our Mediterranean diet.

The full name is “Olea Europaea” and it belongs to the Oleaceae family and is cultivated mainly for its fruit. The trunk can grow up to 15 meters and the wood obtained from it is very small but valuable, elastic and soft.
The olive tree adapts well to our Mediterranean climate (even if it suffers from too much humidity) and is one of the longest-lived trees, it can even live for several millennia! It begins to bear fruit after ten years of age and reaches the period of greatest production around the fortieth.
A mature olive tree can produce about 15-25 kg of olives every year: the first shoots appear towards the end of the winter season and the fruits, that is, the olives, ripen between October and November, when they take on a purple color and are used for the production of oil. To obtain a very aromatic fruit, it is preferable to harvest it when it is still half unripe.
