Nocellara del Belice is one of Sicily’s indigenous varieties that is extremely delicious. It is among the most popular varieties for both the production of extra virgin olive oil and as a table olive,so much so that it is the only product in Europe to have two PDO certifications for the same variety: “Valle del Belice” for oil and “Nocellara del Belice for olives (source wikipedia). It is also known as Oliva di Mazara or Oliva di Castelvetrano .
Table olives are characterized by a fair size (each fruit reaches a weight of 5-7gr),with a rounded shape,and are harvested long before they have reached full ripeness,so as to preserve the deep green we are used to as consumers. If one waited until fully ripe in fact,the olive would turn out a wine-red color. The pulp is firm and slightly bitter,but what makes this fruit special is the ‘high content of polyphenols and highly digestible fats which promote the reduction of bad cholesterol and blood sugar. Perfect as an aperitif olive, paired with cured meats and cheeses, but the maximum enhancement is achieved in the very famous Caprese where, thanks to the combination of colors (tomato red, milk white and the olive’s deep green), it strongly re-proposes the colors of our flag and the excellence of Italian cuisine.
