Looking for a good and easy to prepare first course? Try penne pasta with olive pesto and sun-dried tomatoes!

We are talking about a very popular first course due to the presence of fresh and typical ingredients of the our country, namely olives and sun-dried tomatoes.
Making olive pesto is very easy:

Take 50 g pitted green olives and finely chop them together with 1 clove of garlic, adding 10ml of extra virgin oil a little at a time and a pinch of salt, until a puree.

The nice touch to make this recipe even more appetizing is to also add anchovies and capers!
Take 3 anchovy fillets in oil and, after draining and breaking them up, melt them in a pan With a drop of oil. To the anchovies, add the cherry tomatoes (best if cut in half) and capers and make Cook for 5 minutes on low heat.

Meanwhile, cook the spaghetti and, after draining, transfer it to the pan with the cherry tomatoes, combine the pesto, stir, and serve this delicious pasta dish with some chopped parsley!
